8 Lb Honey, crystallized
20 bags Bigelows Sweet Dreams Herbal Tea?
3 gal Spring Water
Red Star Cote des Blancs Yeast


Methods/steps
Sweet Dreams Metheglin

Recipe source: Alais de Saint Germain

Dissolve honey in water.
Bring to 160F for 30 minutes.
At final 10 minutes, add tea bags.
Set in ice water to cool to 80F, approximately 15 minutes.
At ten minutes into cooling, taste must for flavor then remove tea bags.
Fill sanitized carboy and pitch yeast.
