Ingredients

5 gal
12 lbs Acacia honey
20 oz heather blossoms
1 oz rose hips, crushed
4 gal water
5 tsp yeast nutrient
Premier Cuvee yeast (Red Star)
Methods/steps
6-29-98 Simmered 1 gal boiled water at 150F, and added honey. Poured must onto 3 gal water in pail over bagged heather and rose hips.
6-30-98 Pitched yeast at 80F
7-1-98 Removed and squeezed out heather/rose hips bag
7-29-98 Racked
8-23-98 Thin, not bad. Sweeten on next rack and add more heather tea
9-25-98 Not bad, a bit sour
11-4-98 Not sour, a bit sharp
11-17-98 Racked and added honey water to top off
2-2-99 A little sweet, not too bad, age more
3-14-99 Not too shabby. A little sweet, a bit tart
4-4-99 Age some more
4-24-99 YUM
7-11-99 S.G. 0.992 Bottled

This one has been aging since then, and I've got a few bottles left. It has only gotten better with age, and I hope to make it again soon....
