Paul Holm, owner of Long Island Meadery, doesn't talk like that, but that might be one of the few medieval affectations he doesn't display. A man who produced 1,300 gallons of the fabled honey wine last year - not to mention his own suit of armor - is clearly besotted by the Middle Ages.
