Ok. I see a lot of people talking about using clover honey, blackberry honey etc etc. I have a really cheap source of Honey not far from me (I can get 5 gallons of honey for 60 bucks) but the Honey is just good old fashioned, bees go wherever they wanna go and no clue what flower they visited type honey. So. Knowing that my Honey source is not a flower specific type of honey, maybe you could help me decide what yeast to use for my Mead.
I want a sweet, slightly dry Mead with an alcohol content between 14%-20%. I don't plan on adding any fruits etc to the Mead. It's just going to be straight plain Mead. I will add Nutrients as needed to ensure proper fermentation of the Mead, but I want to stay with a pure mead -vs- an additive type mead for a while before I go experementing with additives like fruits etc.
I'll be using a Plastic food grade (new) 5 gallon bucket for the primary fermentor and a 5 gallon clear glass carboy for secondary fermentation. The mead will be bottled in dark glass bottles. I have basic equipment (the essentials). But hopefully will have other equipment as time progresses.
Advice here would be greatly appreciated and avidly listened too. The only 'Mead' available in my area that i have found since I moved here, is (gags) a white wine with honey added. So I resort to making my own.
