I have a mead that has been in the secondery for some months now. I undershot my gravity a bit so its not quit as sweet as i would have liked.Its a 5 gal batch.So heres what im thinking about doing.
I just got my hands on 4 quarts of crushed strawberries!!! I plan on splitting the 5gal batch in half and adding the strawberries to one,and some more honey to the other.my s.g was 1.084on3/16/06 and ended up at .994 on 4/29/06.i used whit labs sweet mead yeast wlp720.im thinking about repitching with some champaign yeast,after backsweetening,but am unsure if it will just finish to dry.
Any suggestions?

You have about 12% alcohol now. Most champaign yeasts go to around 18%. You'll have to add a lot of honey to let it finish dry sweet!

Why are you thinking of Champagne yeast? I'm not sure what you're trying to gain by doing that...
