Yeah! I've bottled my elderberry-raspberry mead and
I'm ecstatic about how it turned out! :D

Here are my notes...

3 gallon batch

10 lbs clover honey
49 oz (1 can) Oregon Raspberry puree
96 oz Vintners Harvest Elderberry puree (10 days after pitching)
water for 2.25 gallons
1 tsp DAP & 1 tsp Yeast Energizer
2 packets Lalvin K1-V1116

Dec. 2 - Pitched yeast, the Raspberry puree is really bold
Dec. 3 - Stirred vigorously again
Dec. 4 - Bubbling slowly this morning
Dec. 5 - Bubbling once every 7 seconds
Dec. 7 - Stirred in 1/2 tsp DAP, I can really smell the alcohol
Dec. 12 - Added Elderberry juice directly to primary
Dec. 13 - Added .75 lbs Avacado honey
Dec. 15 - Bubbling had stopped so I put it on a heater vent
and viola!
Dec. 16 - Wow is that tart! I added another 1 lb of avacado honey
Dec. 23 - Racked and added 1/2 cup molasses and another .5 lb of
avacado honey
Feb. 4 - Added .75 lbs clover honey
Feb. 7 - Added .5 lbs clover honey and 1/10 tsp sulfite
Aug. 25 - Bottled 14-750ml brown glass bottles

At bottling the taste is wonderful. It's nicely balanced between
tannic and sweet and tart. The nose is tart-jammy. The color
is deep purple-merlot. I've extremely proud of it.
