This was from one of the elders on this board and it was a big help for me.

Make surplus sweet mead ahead of time so you have extra for when the different fruits that mature in your area. I fermented, then racked to secondary, an additional 3 gallons of sweet mead. Last month, added a lb of blueberries to one gallon. Last week, added 1.5lb of Rainier cherries to another gallon. Will probably bottle the last gallon as sweet mead.

I'm actually running short, thinking of making more mead for the fall raspberries and grapes.

I must be going overboard.

Or, you can just get the fresh fruit and put it right in the primary like I do! I think that a considerable number of people who say that they lose the fruit flavor when the fruit is in the primary don't use enough fruit. We just did a Strawberry melomel over the weekend and we went about eighteen pounds of fruit in the primary. Plus these were some of the most fragrant berries I've ever had so they'll be excellent!

Cheers,

Oskaar
