I made the med sweet mead from K. Schramm's book. the first recipe for beginners. I racked numerous times to the point that it was perfectly clear. At this point i added a few pounds of honey to sweeten by racking out some of the mead, adding the honey by slowly stirring it, than siphoning it back into the carboy.

That was about 3 weeks ago and i have no signs of clearing yet. I added sparkolloid last night to it. Any ideas if I screwed up anything during the backsweetening and also how long should i let this sit? Hopefully it will just work itself out over time. I'm just curious.

Thanks again.
Jason

Jason,

No worries - you haven't done anything wrong; it will take weeks to months for the mead to re-clarify once you've backsweetened, especially if you did so with raw honey. Sparkolloid will help speed the process, but it will still take an additional week or two rather than a day or two.

Did you use the hot or the cold sparkolloid? Did you stir it in thoroughly when you added it? If you used the hot one and you stirred slowly but completely, all is well and you should see evidence of clearing in a few more days. The proteins, et al, present in raw honey aren't heavy enough to settle out quickly, but they will eventually drop out of suspension.

I used the hot sparkolloid. I boiled for 5 minutes then poured directly into mead. My mead is in a 5 gal carboy so it was a little difficult to stir in, but i picked it up and gently tried to swirl it in. Once i added the sparkolloid, i saw it quickly disperse all around the top third of the mead.

So once again, patience, is my enemy. :angry5: :D

I will let it sit for awhile. The good thing is i'm going out of town for 10 days on saturday so at least i won't be home to worry about it. Hopefully i will see some sort of results in a week and a half.

thanks again wayneb. You are always a great help. :notworthy:
