So...I made my batch of mead, only added one packet of dry red star champagne yeast, should I use 2?

5 gal sweet mead:

5 gal water
12 lbs. clover honey
1/2 tsp energizer
1/2 tsp DAP
1 pkg dry red star champagne yeast

OG 1.080

Hi Brew2Drink,

One packet should be fine. I usually use 2 packets for high gravity batches (more than 1.130), but it is good to rehydrate the yeast properly (per the manufacturer's instructions) and I favor using GoFerm. In this way the yeast get a strong start.

Be sure to aerate the must for the first 2 or 3 days, to make them their strongest.
