I have just started my first batch of mead this morning. I'm doing a one gallon batch of traditional mead. I have water, tannin, acid blend, 1 TSP nutrient, 1 crushed campden tab, and 3#'s of McClure's Wildflower Honey sitting in my plastic primary with a cover and airlock waiting for the yeast to be pitched. The SG is 1.11. I am shooting for a dry mead. I am going to be using Wyeast 4632 Dry Mead yeast which will handle up to 18%. If my calculations are correct the mead should finish around 15%, if it goes to dry. My questions are: The yeast packet/activator says it will do up to 5 gallons, if I use the whole pack on 1 gallon, will this harm anything? Is 1 tsp of nutrient enough? I would be very appreciative of any input. If there is anything I missed let me know. Thanks in advance.
