Hello,

I am planning on starting a variation of JOA. and was looking for some feedback before I started it.


My plan is:

3.5 lbs clover honey
3-4 cementines cut into 4pc.
25 rasins
2 pieces of Chinese cinnamon Smoother flavor
2 whole cloves
1tsp nutmeg
and a yeast (not sure what to use).

It sounds very tasty. I've not tried tangerines in a JAO but it should work just fine. The thinner skin may mean less pithiness in the mead - let us know.

My last batch of JAO was 3 gal and made with 5 lbs of clementines and like Medsen thought it does have less of a pithy taste (at least to me it did). I'm not sure if it was the scaling up of the cinnamon or loss of some of the pithy bitterness but the cinnamon is much more pronounced here (it could also be a combination of the two).

I make a clementine JAO every December. I use 2-3 clementines per gallon, depending on the size of them. It turns out really well.
