Not sure how credible this is but you be the judge:eek:

Came across an interesting article (http://www.slashfood.com/2006/08/29/sugar-free-honey/) recently. Not much information on it but if its true, this would be an interesting way of back sweetening without having to worry about fermentation restarting and without using artificial sweeteners.

The bees will be fed on stevia plant leaves, which they will use to make honey. It might work, the sweetening agents in the plant have glucose as part of their molecular makeup. All depends on whether or not the enzymes produced by the bees can convert it to honey.
