hi,

since we don't have the brand sugested in the receipe here I bought bread yeast (power) from Bruggeman.
It is saccharomyces cerevisiae.

Will this do as well ?

Fleischmanns (sorry for wrong spelling???) is a brand available in the US. We don't have that either.

There seems no reason why your local brand won't do the job just as well.

Afterall, it's "just bread yeast", and not like you're looking to use a specific strain/type of wine yeast (JAO made with wine yeast will ferment very dry - and it's not very nice dry).

p.s. the one I use is this one (http://www.goodnessdirect.co.uk/cgi-local/frameset/detail/280691_Allinsons_Dried_Active_Baking_Yeast__125g.h tml)

I used Hodgen Mills in my first batch of JAO and it turned out fine. Just shared my first bottle with friends while camping this pack weekend and it was great! Can't wait for the other bottles to age and see how they taste then.

I use bulk yeast I get at Whole Foods. Keep it in the freezer, bake bread every week. It worked fine on 3 batches (so far) of JAO. I think the brand is SAF, but not sure. Any bread yeast should work.
