is it ok if I use apricots with the skin. I know oranges are a no go but are apricots ok?

It may leave you with more tannins in the mix, but you can definitely use the skins. Do you have a recipe planned?

its actually for a beer but here's the recipe I'm using
7.5#LME
8oz crystal 10L
1oz willamette hops(60 min)
1oz willamette hops(5 min)
california ale liquid yeast.
2 apricots were added to boil (sliced into pieces


secondary:
adding 5lbs of apricots(halves?)

Using the skins in an ale recipe should not present a problem. What you worry about with the skins is getting excessive bitterness and astringency, and in a dry mean/wine that might have an adverse effect on the flavor. In an ale where you have bitterness from the hops, the skin effect will be drowned out.
