I'm making a Braggot and don't have D47 as per the recipe. I've got Cote Des Blanc, Montrachet, and Premier Cuvee. Which should I use?

Hi, Clifton! Welcome to the "Gotmead?" community!!

It would be a bit easier for us to suggest an alternative yeast if we knew more about the entire recipe. "Braggot" can be a pretty broad category, and the yeast chosen will definitely have an impact on the final flavor profile. If you could post a list of the ingredients (types and amounts), then we'd have a better shot at steering you in the right direction in picking from the list of yeasts that you already have available.

BTW - If you're trying to duplicate a "tried and true" recipe for the first time and you don't happen to have one of the ingredients, when it is something as relatively common as D47 yeast, you could consider getting some before you start the batch. Even if you don't live anywhere near a LHBS, D47 is a very common Lallemand/Lalvin yeast strain and you can order it online from virtually any online shop. Northern Brewer and Beverage People are two that come to mind....
