What should it smell like?

I opened the must today to get a SG reading. I don't know what I should be smelling. How will I know if my must has soured?
 
The smell depends on so many things, it's impossible for us to tell you what it should or shouldn't smell like without knowing what kind of honey, what kind of yeast, and what other ingredients you've added.

Some general rules though - if it smells like sulphur it needs aeration and nutrients, if it smells like vinegar it might be turning into vinegar.

Sometimes mead just smells bad though until a while after fermentation is done.
