Anybody out there know what the nutritional content of lees is?

Dead yeast cells, right? Protein? Fiber? Anybody know?

Anybody out there have any good recipes for using lees?

When dry, it should be roughly equivalent to brewer's yeast supplements (http://nutritiondata.self.com/facts/custom/1323569/2). Lots of protein, B-vitamins, and minerals.

If it's not dead, ie from a dry mead, it's great to use as a bread starter. Yummy heavy bread.
