View Full Version : Increasing the P.H.

I'm currently brewing up my Holiday Cyser (see "Brewlog") and I noticed a strong sulphur smell. I knew that this is a product of 'stressed yeast' so I immediately added additional nutrients, checked the must temperature and the P.H. The P.H. is down around 2 and I want to bring it up to 3.5 - 4. There are 3.5 Gallons must total, and I have added 1/2 a gram of Potassium Carbonate to the must thus far. I'm waiting to see how much that brings up the P.H.

Should I add more? If so, how much?

Wow, a pH of 2 should pretty much stop all activity. I'm shocked it got that low without stalling first.

If your pH really is 2, you'll probably need more than the amount of carbonate you added. Potassium carbonate dissolves pretty quickly so you should be able to check it again after say half an hour. Once you get above 3.2 maybe wait a few hours before adding more.

Mistake!!!

That's supposed to say a P.H. of "3", not 2! My bad!
