Hi GoHawks.

Welcome to GotMead?

Yes, you can ferment/bulk age in soda kegs (Cornelius kegs). To bulk age, you will need a way to pressurize with CO2 to seal the keg.

On soda kegs used to ferment, you will need to shorten the out tube so that it is off the bottom and above the sediment. With a shortened tube you can transfer with co2.

I also believe that you can actually carbonate a sweet mead using a soda keg and co2.

If you google, there are a lot of post from brewing forums that discuss this in details. I hope this helps.

but how do you know how far off the bottom (or at least, how far from the top of the sediment) the tube is?

If you shorten the tube by about 1 inch, that will usually prevent sediment transfer issues.

If you search for Corny or Cornelius you will find numerous threads here that discuss pro and cons and various approaches to kegs.
