Looking for suggestions for a first mead made with RC 212.
I have yet to try this strain and now seems as good a time as any.

It does its best work in capturing and preserving the anthocyanins (dark color compounds) from dark skinned fruit (blackberries, elderberries, blackcurrants, dark skinned grapes, etc.) and it helps to extract and preserve certain polyphenols that add to the fruit expression, so it is my go-to yeast when I do anything with dark skinned fruit.

I would highly recommend Oskaarz "You Bleu My Berriez" Melomel (http://www.gotmead.com/forum/showthread.php?t=12468).

Use Black Currant for the ".5 gal dark berry juice of your choice".

Totally awesome mead.
