So I now have 3 5 gallon batches of mead going and I think I have a pretty good grasp on how all this works. (LIE) What I would like to know is if the honey/water ratio is the same for cane sugar/water. I've read that it is'nt but wanted to confirm here.

Anyways does anyone know the correct ratio for sugar/water/yeast for a 5 gallon batch?

Because of its water content, honey and sugar don't weigh out quite the same, you need a little less sugar... I used to know what SG you'd get from 2 lb sugar in 1 gal water but I've packed my log book already, might be on Jack Keller's site? Something like 1.090.

Dunno about the pound thing, as its sold in 1kg bags here.

But 6kg of sugar, and 21 litres of water gives 25 litres with a 1.080 gravity.....
