Anyone using there post mead making yeast to make bread? I would be interested.

I make quick breads with my lees as well as my spent fruit.

Drunken Pumpkin Bread, etc.

Like the minimalist bread? I make that no knead minimalist bread every day I'm not on shift.

The recipe is different every time I make it, but goes something like this:

3 c of various kinds of flour (corn meal, whole wheat, buckwheat, all purpose, each batch contains at least 2 kinds)
2 c puréed meadfruit( pumpkin, raspberries etc)
1 or 2 c lees
1 or 2 or 3 eggs( depends on how moist the batter is, sometimes I go vegan and use none)
1/2 to 1 c oil(sometimes I use olive oil!)
2 tsp baking soda or powder or 1 tsp of each
1-1 1/2 c honey
1 tsp salt
Plus spices to suit ( cardamom cinnamon nutmeg clove ginger whathaveyou)
1/2 pkg chocolate chips
Whatever nuts are on hand in quantities you like

Pour into oiled & floured loaf pans
Usually makes 2 regular size plus one half size

Bake at 350f for about an hour

Sometimes I use Wayne's soda bread recipe

I used spent cranberry mush from a batch of wine or mead (can't remember anymore) to start a batch of bread and I tried to do it the same way I used to do my sourdoughs (dump a cup of mush with a cup of flour and let it get started) but I ended up having to add bread yeast too. I was going for something gluten-free so it turned out a little gummy from the Xanthan gum and still fell flat... my gluten free recipes still need a little work...
