This is my first batch, I've already posted a thread stating "slow yeast." Today is day 7, and I still have active fermentation.

12 lbs Orange Blossom Honey
approx 5 gal spring water
Crosby & Baker Distillers Yeast
LD carlson yeast energizer and nutrient

og. 1.082
SG. 1.050 (today)

Should I wait longer, or should I rack it? The Copleteat Meadmaker book states that SG. should be around 1.030-1.010 for racking.

Good mead will come to you, just add patience! ;)

Hold off on racking this. You don't have any fruit or other things that will go bad on you in the short term, and if you rack before the ferment finishes, you'll slow the ferment way down by removing most of the yeast that are still hard at work.

Try swirling things around a bit, that'll help keep the yeast in suspension, which keeps them eating at a decent pace.

Rack it when you've got three days of consecutive gravity readings that are unchanged. Judging by the pace your ferment is setting, I'd hazard a guess that you'll still be fermenting for the next 1-2 weeks, if not longer.
