Have not posted much since i joined this site. But I have read a ton through my limited adventures in Mead brewing. Started with a sweet mead. Then moved on to a JAOM variant (left out the oranges and substituted D-47). Then moved on to Joe's Pyment and learned how to Macgyver together a blow off tube with a spare siphon hose a pen and a clamp. Here is my next adventure.

2 pounds of wildflower honey

6 oz. Buckwheat honey

64 oz Pure organic apple juice

Pectin enzyme

1/2 tsp Yeast energizer

1 tsp Yeast nutrient

4 cinnamon sticks.

pitched Ec 1118 at 106 degrees

Og = 1.120

If this is a gallon, I would see about getting at least 2 of those cinnamon sticks out, They will pack an overpowering punch at those levels. Ive found that when the mead go dryer the cinnamon will dominate in a cyser and leave nothing on the pallet for the rest of the mead.

Thanks for the advice. Luckily I need to do a gravity reading today.
