So i know what i already did wrong. Recipe isnt the greatest. Just had extra stuff floating around and threw together ~5lbs pineapple and mango's, 4lbs of honey and 2 gallons of water. After a month and half, doesnt taste like its gone bad, but also doesnt have any fruit taste. Just racked it into two 1 gallon jugs with pectin enzyme and a camden tablet. figured i could at least backsweeten it to give it some sorta flavor. Anything else i can do to it?

Yes. Let it sit. I've had a couple of batches that were really disappointing. I almost threw them out. But then someone here imparted to me the three rules:

  1. Never throw out mead
  2. Patience is an ingredient best added up front
  3. Never throw out mead

I know, you weren't talking about throwing it out. But don't fret too much over it. As time goes by, it may 'fill out' and the tastes may return. And if they don't, use it to blend with any one of the half-dozen other meads you've made since this one. ;)

I would be careful about adding anything at this point. Let its own tastes come through before you decide. You may miss something great.

Passing judgement on anything this young is just speculation... Backsweetening as you suggested might help too, a lot of things are tasteless when there's no sugar left, especially at first.

And next time you do a JAO variant, make sure you use 3.5 lb honey per gallon...

throw some Habaneros in there, it may still taste like ass, but at least it will be hot ass..... Seriously, it could mask some flaws...

What else can you add?

Whatever you want. If you are worried about the fruit taste, then you can add some more fruit.

If it has been a few days since you added the camden, if you add more honey your fermentation could start off again, as I doubt your abv is maxed out with that little sugar in the start.

More fruit (or fruit juice) or more honey wouldn't hurt. My usual finishing gravity for a JAO is usually between 1.030 and 1.020 so if you boost it up to that level maybe it'll taste like something again.
