After fermenting since xmas, it finally cleared.
Started with 18lbs honey in 5 gallons, it fermented Drrrryyyy
Backsweetened with 4 more pounds, cleared again. Added fifth of 151. Cleared again, now sampling.
To me tastes watered down. Slightly sweet, and no wine fingers on glass. Watered down as in 6 ice cubes meted into 6 oz.

What's the gravity now?
What honey and yeast did you use?
What was the temperature?

It sounds like the ABV must be quite high. That alone can mask aroma and flavor to a degree.

If you want it sweeter you can add more honey. That will also add aroma and flavor.

If it is sweet enough for your tastes, then letting it age longer will allow the honey aroma and flavor develop - at least 12 to 18 months total. You might take a glass and add a tiny bit of acid blend to see if that perks up the flavor?

gravity now? Will check next opened bottle. Was less then 1. whne adding extra honey.

ABV , was aiming for 16%, but did add fifth of 151 to 5 gallons.
Still tastes like someone watered it down, but otherwise nice.

Acid blend,,, a small sprinkle in a 12 oz bottle (355 ml)?????
