First post here and wanted to see what you thought of the ingredients. This is already rolling as of this afternoon.

2 gallons apple juice.
3 lbs raw honey.
2 tsp brewvint yeast nutrient
1/2 tsp wine tannin
11/2 tsp acid blend.
1 packet red star pasture champagne yeast.

OG was 1.101. Yeast pitched dry at 70f. It's fermenting around 68f.

I'm thinking i added too much nutrient too soon.

What do you guys think?

Maybe ? Maybe not.....

Do you have any details of the nutrient ? How much nitrogen does it provide ?

If anything, acid up front might be an issue......

The yeast is likely to take this dry, so you may need to think about back sweetening, but wait to decide until it's finished......

I'll have to contact the brew store where I bought it to find out.

Should I be adding more nutrient any time soon?
