I have my first mead cold crashing ATM, after it clears and I stabilize it, it will be bottled, some aged and some enjoyed.

After this I was thinking of doing a nice rhodomel, seeing as it's that time of the year for roses.

What flavor would the rosehips give the mead? Just a slight floral note?

I find rosehips to be more tart and citrusy...a bit like cranberries, rather than floral. They contain a high dose of Vitamin C. The petals definitely give a more floral note to a Rhodomel.

I agree with Guinlilly, the Rose Hips are pretty tart with a decidedly citric character and a deep reddish color.
