View Full Version : Sourwood honey

As the topic suggests, I just got a couple jars of sourwood honey. However, I don't have quite enough to make a full gallon. I also haven't ever tasted this honey. So my thoughts are to either use all 2.75 lbs of this and add some other type till I reach the SG I want OR to make my first melomel. From what I've heard, this honey isn't exactly the boldest but it IS delicious. So should I use fruit or a different type of honey? And which type of fruit/honey would go with this well enough to not drown out the sourwood honey taste?

I have used sourwood with OB to great results.

Haha so after posting this I thought to myself,"I'd really like to make something light and fruity for a nice summer day out on the boat". Do you have any fruit suggestions? I'll probably use orange blossom to raise the SG a little since I like it to finish sweet, but I think I'll make it a melomel
