View Full Version : Quick sparling OB mead - rdy for Christmas?

I'm thinking something like, 7-8% ABV, a light honey like OB or Acacia, ferment with nottingham, wyeast 1388, or EC1118, month in primary, then 3 weeks in the bottle. Sporting chance this will be good to drink at Christmas?

Are you planning to naturally carbonate or force carbonate in kegs with CO2?

Lower alcohol and sweet meads are more drinkable in a short time than are higher ABV and dry meads.

Your alcohol range is favorable for earlier consumption. However, if you plan to naturally carbonate, your mead will be dry.

Just give it a try. Even if you find it needs more aging, you can always have it next Christmas.

A full 12% ABV BOMM would easily be ready by Christmas. Use less honey if you want a lower ABV.

Cheers both. Yes, on thoughts I should just try it with 1 or two gallon batches. If not, it'll be good for Easter.
