View Full Version : Goin to reproduce one of my recipes but with lower abv

The first time I made this blackberry mead I put enough honey to cap out the 71b yeast and have residual sweetness. It ended up having a final gravity of 1.010.

So now I want to make the mead again but with a abv of 12.5ish. I'm goin to back sweeten this but I'm thinking 1.010 will be too sweet now. Any recommendations?

An easy option would be to start at a lower gravity - around 1.095, take it dry, stabilize and then sweeten to the exact point that balances properly.

Well yeah that's the point sorry. When I backsweeten this I'm thinking the first fg of 1.010 will be too sweet now. So really just wing it and slowly backsweeten a little bit at a time?

When you are ready to backsweeten, take a glass of mead and sweeten it a little at at a time until it tastes right. Then measure the gravity of it and that will be your target. I'd repeat this on separate days to be sure.
