So my local homebrew guy gave me a 5 inch spanish cedar infusion stick. Anyone use this stuff before what kinda flavors do you get from it. The search engine doesnt give much info here.

I don't know what it does in mead, but whatever it does will go great with a cigar!

I'm very curious how it turns out for you. I can imagine it might work well with a rich berry Mel, or perhaps a sack traditional with a complex character like Heather or buckwheat.

I'm not really sure what to put it in. Tempted to make a wild flower traditional and see what happens.

Maybe juniper, a little mint, a forthright honey? This sounds like a great chance to make a 5 gallon trad with the cedar stick, then split into 1 gallon batches with various additions. Exciting!

Do you think a 5 inch spiral stick is enough for 5 gallons? I'm hesitant to use it on anything other than the wildflower that I have on hand.

When I read "cedar" I went to check on it because I'm pretty sure cedar as we know it is not good for consumption, but it turns out it's in the mahogany family. I tripped over one brewstore link that said spanish cedar spirals would give authentic barrel flavour for up to 8 months and it's supposed to be a very aromatic wood so maybe one stick will be enough?

<grin> Really only one way to find out...

So I'm a guy and I clearly over estimated the size :/

Made a one gallon batch with wildflower honey and I'll use the cedar on that.

One gallon of dry tradition with wildflower honey. At 12% abv it taste pretty much like a one month old mead, nothing exciting yet. I'll be checking it once a week.

@McJeff - your picture shows a lot more head space in the jugs than I normally run, am usually 1-2 inches from the stopper. Does the extra space affect the aging process?

I'm sure it does on some level. It's why I hate making 1 gallon batches too much lose when racking. Added a Camden tablet at racking and usually stuff still comes out fine.

That much headspace is asking for trouble, and there are things sulfites won't stop.
