I'd be interested to see how the Hawaiian honey does in a traditional mead.

I was also thinking traditional for the Hawaiin honey, no other way to truly appreciate em. They both taste very floral. Yeast I have on hand are d47,71b,kv1116 and I might have one 1118 left. Would be nice to make it not so estery and let the honey shine. 1118?

Unless you keep it cold, EC-1118 tends to blow off too many aromatics. I find K1V is pretty clean fermenting in the upper 60sF. DV10 is very clean but needs to be kept cool like EC-1118. D21 makes a nice clean ferment as well.

I've not had the opportunity to use Fermaid O but I was just reading about it since you mentioned it. I've always done 1/2tsp dap+1tsp fermk per gallon split into 3 doses. So if you don't use dap and ferm o doesn't have dap. Seem s like the mead will be a bit deficient?
