Depends on the stir plate. And if the honey is sitting on the bottom before adding water to mix.
Most stir plates do not have the nuts for it. But I have seen one or two out there that can get a vortex in a 5 gallon carboy, but usually for beer that I've seen it for.
There are some that claim to stir a 5 gallon carboy. The better term would be they move water at 5 gallons. I just got the one in the video below showing it at 5 liters and speed 1 & speed 5. I tried a 5 gallon carboy with a variety of stir bar lengths and barely got circular movement let alone a stir with water. The curved bottom on carboys quickly throw the larger bars. As your stir density increases performance decreases quickly.
