opened a bottle of JAO I started earlier this year. Well its not a true JAO because I forgot to buy raisin, I used dap/fermK in it. I also ran it thru a course filter before bottling, really made it shine. Think my cloves were on the old side, the flavor is a bit lighter than the last JAO I made.

Thank you! Jao is a bit sweet for my taste but I have a few friends that really like it.

I am getting to like the JAO as a sweetener for too dry traditionals. I'm making a few batches with no clove and clementines instead of oranges (less rind...less bitter) that I think will be the ultimate back-sweetener for those of us that prefer not to back sweeten with straight honey or if you don't want to chemically stabilize before sweetening. I like it just fine and I'll drink a couple of glasses in a sitting no problem. For me it's a great replacement for super expensive Sauternes.

Hmm I do have a strawberry that I didn't backsweeten enough, wonder what a blend would taste like.

I actually just finished the first half and was entertained! Really enjoyed listen to brad stumble thru opening a meadery.
