View Full Version : "Fresh" vs "Old" honey

Hi,

I'm not sure if this is a stupid question or not. I've heard that honey never spoils, but that can mean so many different things. I'm looking to buy some honey in bulk over here and I found someone that has some for sale from last summer. I'm therefor wondering if that's fine for mead making or if the honey will lose some of it's aromatics or otherwise change for the worse with age.

It might be better than this years. It depends on the vintage, there's good years and there's lesser years as always. It's a natural product after all. Manufacturers only slap on a 'best before' date when they bottle it because they are obliged too by law.
