JAO made per the recipe except only the zest without pith was used. This is a five gallon batch.

It's good, but sweet and kind of boring for lack of a better word. I think the wine term may be "flabby." I am going to add a little acid blend to counteract the sweetness.

1) What is a good amount to add to five gallons as a starting point?

2) Are the effects immediate or does it take a while for it to blend in?

By leaving the pith out form the recipe, you're missing out on the bitterness it adds. You might want to try adding some tannin to replace that to balance the sweetness. Between the orange and the pH drop of the mead, there should be a fair bit of acid already.

Either way, I'd suggest trying a small test case; take a cup of the mead, add in whatever you want to go with, and have a taste. Leave it a week or so and taste again, see how it changes.
