Hello,

I had a quick question I wanted to get some help on. I was following the recipe for Yo's Strawberry pizzazz, ending up filling my container to within a couple inches of the lid. I followed the initial steps and ingredients, but after 24 hours saw no fermentation action. I was using the staggered nutrient addition I read about adding at 24, 48 and 72 hours, etc. When it came time to add the nutrients I also added another 5 grams of yeast that I had rehydrated. I did end up adding too much nutrients after I double checked (about 50% more).

This morning when I went stir and push the fruit down, there was a little bit of blow back in the air lock, so i replaced it with a vent hose into a partially filled bucket of Star San. I had quite a bit of foam and had to scoop some off to put the lid back on.

Now, I came home tonight and had quite a bit of fermentation action. I'm getting at least a bubble a second from the vent tube, and it is time to add the next set of nutrients. So, the question is, since the fermentation is going so well, should I skip the nutrient addition tonight, or go ahead and add the nutrients.

You should wait to start feeding your must until you see active fermentation. It goes through a lag phase when first pitched. And you won't see anything. Once it starts fermenting. Then start feeding. I would wait until it slows down some before you feed it more.

Thanks, that was what I was hoping. I just got back from the gym and the fermentation has actually picked up more. On the bright side my whole room smells likes strawberry shortcake.
