I am making my first batch and have a couple of questions before I start.

Firstly, I see that the commonly used nutrients are Fermaid O & K. There doesn't seem to be anywhere that I can readily get those where I live (Australia) but I can get a wine yeast nutrient called Ferm Control. I was wondering if anyone has used it?

Secondly the directions for the ferm control require a YAN reading. I cant find any kind of information on average YAN in honey must. Would there be a figure that was reasonably safe to use?

Oh I forgot to add the recipe i had in mind has 10lb honey in a 5 gallon batch lookng for an OG of 1.080 -

Your YANN count in raw honey would be less than 20PPM. Probably even less than that. It's not enough to even figure in when you doing your food calcs.
