I just stumbled across an excellent primer in organic chemistry that explains simply the biochemical processes which produce both methanol and ethanol.

I know that there are many on this forum who have a much deeper understanding of the process than this will cover, but it is an excellent start for the beginner who is interested in knowing why and how yeast turns honey into ambrosia.
