Hey All.
Well i have my first batch of mead going, and its in a 5 gallon sized food grade bucket, how can i tell if the fermentation process is working? I have an air lock plugged into the top of the bucket. ALso the recipe im attempting was supposedly ready in 3 weeks. I figure my first batch prob wont be drinkable lol so i pikced a quick one. So the question there is if it only takes 3-4 weeks when should i rack first? I figure after about a week. And how do i get the racking cane into the bucket?

As CO2 is released, the pressure will build in the bucket and force air or CO2 thru the airlock. You should see bubbling in your airlock within a day or two of adding yeast to your must, depending on the headspace. Realize the pressure has to build up in your "bucket" before you will see any signs of active fermentation.

Even with the "quick" recipes, I would not rack after only a week. Watch the airlock. The airlock will bubble quickly at first. When the fermentation slows down, to one "blurp" every 10 seconds or so, rack it!

If the top is easy to pop off without stirring up your mead too much you can do that. Otherwise, put it thru the hole for your airlock. I have used both methods.

I would say that for most 3-4 week recipes you only rack once and that is only to get the mead off the dead yeast. I would rack after you are pretty sure fermentation is complete at the end of the 3-4 weeks.
