Just curious,
If yeast is a fungus that needs a dark environment, then would it be possible to stabilize your mead by leaving it in the light for a day or two? Would this have any negative effects?

I am familiar with an experiment that proves that the light reduces colonies of yeast and their ability to function but not that it alone would completely erradicate them. Hot temperatures are much faster and more effective. (quick pastuerization)
Here is a conclusion of one experiment that showed fermentation is reduced but not eliminated.

Light will inhibit the yeasts growth but will not kill them off.
