I bottled my first gallon of pyment yesterday, and it was very nice!! It only took about 6 weeks to ferment out. I used a pound of honey and about 500 ML of grape concentrate, and Lalvin 71B yeast. It is light and refreshing, and the honey and grape blend together well. It's not quite something that I'd want to consume 5 gallons of, but it turned out very well.

I gave some to my wife (who is not a fan of my fermentation skills) and she said "hey, not bad... this would be good mixed with some 7-UP as a spritzer". Oh well, I guess that's the only praise I'll ever get from her.
