question...i've been meaing to ask this question for a long time... i know you are a huge advocate of keeping this recipe as simple as possible but, have you ever tried to make this without the orange rinds and compaired it to the recipe with the rinds? i mean...yes its simple this way but...the white pith of the rinds can be pretty nasty!

No I haven't. There is a reason for leaving them in. You don't squeeze or separate the the orange from the pith so it really doesn't make it that bitter or nasty. Its actually a necessary ingredient to get the desired effect. Its actually quite good. All of the ingredients work together to make it foolproof. There will be no dead lee off flavors, infections, great fermentation, and all natural ingredients to create a good mead without fancy yeasts or chemicals. Don't even need sulfites if you let it finish. It's " magical ancient mead " and defies all mead rules like using a primary, rehydrating yeast, stirring, racking, leaving on lees til clear and bright and using an unorthodox yeast for mead making.
One can alter honey and spice amounts and variations but why mess with a good thing? Took too many batches to make it good, fool proof and simple.. simple... simple.
Heck, I might even write a small book for beginning meadmakers featuring this recipe as an introductory mead.
Would be great to use idahoskunks pictures!

Ok i have added the ingredients and the link to the converstions in recipee thread to the your first recipee thread, and will be making variations of this batch on new years day. I'll post more info as it progresses.
