How much vanilla extract would y'all recommend? I'm thinking about adding some to secondary, but don't want to overdo it.

1 oz per gallon of Watkins double strength Vanilla is detectable. If you are a Vanilla lover add another ounce. Don't go more than that unless you taste it after it has aged some. You can always add later after you age and test but you can't take away.

Hmmmmm

Guess the only thing to do is add 1 oz, see if it works, add more if needed.

Not sure it matters to me whether I use beans or extract. This is largely just an experiment to see if the vanilla is the "missing" flavor.

I hope you have a chance to try the "live" (lol) vanilla beans! They have a wonderful flavor that the extract just doesn't impart.

I know it will work out well either way!
