A store in New York City has chestnut honey. I bought one jar (14 ounces for 7 dollars) and find it interesting. It has a woody flavor to it.

I'd like to buy more and make a batch from it, but the price holds me back. Has anyone used this type of honey before?

Neverheard of it but a woody flavor sounds very enjoyable. I'll see if I can find any on google.

I've already checked Google. One person in Great Britain made a batch about three ago. Her e-mail address is no longer good, so I can't contact her.

Much like the rest of life, I'll be going at this blindly, relying on one part skill and nine parts luck.

This week I finally got around to bottling my chestnut blossom mead. Actually, I bottled half in wine bottles and am force carbonating the other half.

I've very happy with how this mead turned out. It's amber in color and very very clear. The aroma and flavor are both woody with more than a hint of chestnut. The FG finished at 1.008, though it does taste a little drier than that.

A friend tasted it and said it was the best mead I ever made.
