It is also illegal to freeze concentrate your mead, by putting it in PET plastic bottles in the freezer until solid (allow some head-space), then up-end over a container to collect the run-off.
Once you are left with relatively clear-looking ice in your original PET bottle, repeat the procedure a second time by placing the collected liquid in a new PET bottle and freeze . . .(the higher concentrated liquid will be harder to freeze).
Of course, it intensifies the flavour, so this may not be an improvement. On the other hand, the increase in alcohol may need more sweetening or an increased flavour to balance the alcohol content. Its a pity you can't experiment with this to find out how to solve this dilemma
