I was just wondering if an airlock is required for aging or if a cap on the carboy is good enough. Also, about what temperature is best for aging? Thanks

60-70F is a good range. Closer to 60 even better. If it is done and completely still a cap is fine. If not, an airlock with water is best.

Don't forget to top-up to minimise headspace (unless you are wanting the complexity of sherry flavours).
