This is my first batch of mead, freshly racked after about 2 weeks (hence the mess on the stairs!)

I don't want to rack it again for a bit, but I noticed this morning that there's a layer of sediment starting to form on the bottoms of the carboys. I seem to remember that it's not a good idea to let mead sit on the lees of EC-1118 yeast, but I want to keep exposure to a minimum. What say you guys?

When it gets to about 1 or 2 blips a minute rack again, you should be fine though. I did 3 rackings and aged for about 4 months before bottling. I used EC-1118, and I am still getting a bit of fermentation and sediment after bottling. Don't worry too much about it. I found mine quite awesome after only 6 months.
