I'd never had elderberry wine, but it sounded cool so I ordered
a 3/4 gallon can of concentrate from Vintner's Harvest and used
it in a melomel recently...

10# clover honey
3.1# Oregon Raspberry puree
water for 2.25 gallons
1 tsp yeast nutrient & 1 tsp DAP
Lalvin K1-V1116 yeast

wait until it slowed then added

2.25# avacado honey
3/4 gal Vintner's Harvest Elderberry juice

I racked this morning and holy crud! It is so tart! It's considerably
more tart than either my cranberry or pomegranate mels and I really
wasn't expecting that. :)

I've done two batches of elderberry mead from berries and found that the tartness will mellow during aging. Give it a little time, you just racked it, in a couple of months you will love it if it lasts that long.

Did you oak either of your mels? What yeast did you use?
